Ingredients & Proportions

1 cup Urad Dal 2.25 cup Idli Rava 1 tsp methi seeds 2 tsp non iodized salt

Start with washing &  then soaking urad dal with methi seeds for 12+ hours.

Then grind  the urad dal & methi seeds (stone grinder  is the best to maintain batter temperature)

Blender is okay  too, just use ice cubes, so batter doesn't overheat while blending!

In the meanwhile, get the idli rava,  & properly wash it.

And squeeze out all the excess water.

I prefer using Instant  Pot, so I add ground  batter & idli rava, along with salt directly in the main pot of Instant Pot. Go to post to see alternative methods.

For best results, it's ideal to use non iodized rock salt, as iodized salt contains anti caking agents that can hinder fermentation.

 Give everything a  quick mix, and then  hand mix the batter  for a couple of minutes. This helps to aid with better fermentation.

Close the Instant Pot  with a regular  lid.  NOT the Instant Pot  sealing lid. I prefer a  see-through glass lid.  And it's all set!

Set it for 12 hours in Yogurt Mode (normal)

And you'll have well fermented batter in  just 10-12 hours!
